The Bluest Blueberry Muffin

These are great blueberry muffins because they are loaded with blueberries and beautifully baked to golden brown. Bake them and enjoy with your families for that sweet tooth meal.
Serves: 12
Ingredients:
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup vegetable oil
- 1 large egg
- 1/3 cup milk
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1/2 cup blueberry jam
- 2 tablespoons coarse sugar for topping
Instructions:
- Set your oven to turn on the preheating and set it at 400°F (200°C). Prepare a 12-cup muffin tin by greasing it lightly or by lining with paper muffin cup.
- Sift the flour and mix it with sugar, salt, and baking powder in a large bowl of the kitchen.
- In another bowl mix the vegetable oil, the egg, milk, and the vanilla essence.
- Mix the wet ingredients into the dry ingredients, and mix until the ingredients are only slightly mixed. Do not overmix.
- Prits gently on a floured surface, and then fold in the fresh blueberries.
- Place the muffin batter to half full in the muffin cups. Spoon a teaspoon of blueberry jam to the middle of each and pour more batter on top, filling the cups to three-quarter full.
- Sift the last half of the coarse sugar over each of the muffins.
- Bake for 20-25 minutes, or until a skewer inserted into the centre of the cake emerges clean.
- To do this, allow the muffins to rest on the pan for about 5 minutes before turning them over to the wire rack to completely cool. Enjoy!
